gastronomiaThe ethnic diversity of Colombia manifests itself in Colombian gastronomy. In Colombian food there's a rich mix of Spanish and Indigenous ingredients with African, Arabe and Spanish preparation.


The principal ingredients in Colombian gastronomy are: pork, potatoes, beans, corn, chicken, rice and soup.

Some of the most typical Colombian plates you should try are:

Ajiaco: soup made with chicken and three kinds of potatoes using the special Colombian spice guasca, a Colombian specialty.

ormiga culona: fried ants, typical of Santander
Lechona: Stuffed pig -- stuffed with rice and meat, typical of Tolima.
Bandeja Paisa: A mix of beans, eggs, meat, rice, plantain, chorizo, fried pig skin, potatoes, and salsa typical of the Paisa region.
Sancochos: chicken, pork and beef soup
Tamales: stuffed with rice, chicken, and vegetables
Patacón with everything: Green, fried plantain served with different meats and cheeses.
Arepa with everything
: the same as the fried plantain. The arepa is a tortilla made of corn flour.

Empanadas: Small, deep fried pockets filled with rice, meat, vegetables served with spicy sauce

Another of the marvels of Colombian food are its fruits. Due to its tropical climate, the great bio diversity and fertile soil, Colombia produces delicious tropical fruits like: the Lulo, Papaya, Mango, Zapote, Ciruelas, Madroño, mandarins, grapefruit, Litchi, Níspero, Jabutijaba, sour guava, sweet guava, melons, watermelon, oranges, Jabutijaba, sour sop, Anon, Copoazu, pineapple, Pitaya, Curuba, passion fruit, Granadilla, avocado, Carambolo, Borojo, Mangostino, Corozo, strawberry, and many other fruits that you can eat fresh, in desserts and juices.

In the principal cities of Colombia (Bogotá,Cartagena, Medellin, Barranquilla, Pereira, Manizales and Cali) it's possible to find many restaurants with different levels of quality and price. Throughout the rest of the country, there is less variety, though sufficient.

Set lunches is the most economical option and normally consists of soup, entree and drink.
